Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Citrus Syrup: Put every components inside a pan, bring to a light boil, agitating to dissolve. Next, remove from the burner allowing it to reach room temperature fully. Decant to a clean bottle, cap it and store chilled, it can be stored for around one month.
Preparing the Premix: Mix every liquid ingredients into a large bottle, let it rest for one hour, then strain preferably using cheesecloth, to ensure it's perfectly clear.
For serving: Measure 85ml of your premix into a mixing glass filled with ice, gently stirring carefully for one minute until cold. Strain into an chilled martini glass or equivalent, garnish with a few cranberries adding the final touch using a light spray of the essential oil above the glass.
